To start, cut a thick slice of your bread of choice and pop it in the toaster to get nice and crispy.
While the bread is toasting, prepare the ingredients. Do this by thinly slicing the tomato and purple onion and removing the tops of the dill from the stem.

Once the bread is toasted according to your liking, spread on a generous layer of cottage cheese. Making it even throughout the toast and spreading it flat.

On top of the cottage cheese, lay the thinly sliced tomatoes as well as sprinkle with a bit of salt and pepper (and a bit of olive oil if desired). This will help bring out the juices of the tomato slices and add extra flavor!

Next, add on the thinly sliced purple onion. These will add zing to the cottage cheese lox toast.

Ingredients
- 1 thick slice of bread/bagel, toasted
- 1/4 cup cottage cheese
- 2 slices tomato
- 2 ounces salmon lox or smoked salmon
- 3 slices red onion
- 1/2 teaspoon capers
- Fresh dill, for garnish
- Salt & Pepper
Instructions
- To start, toast your thick slice of bread until it is crispy.
- While the bread is toasting/cooling a bit, prep the other ingredients. Thinly slice the purple onion as well as the tomato slices.
- Taking the cottage cheese, spread it evenly onto the toasted bread.
- Then, layer on the tomatoes and sprinkle with salt and pepper to help bring out the flavor.
- On top of the tomatoes, sprinkle on the thinly sliced purple onions.
- Finish off with the lox, then the capers and fresh dill!
