How to Make Pumpkin Chia Seed Pudding Step-by-Step
To start, in a mason jar (or jar of choice) add chia seeds, pumpkin puree, maple syrup, milk, cinnamon, nutmeg, and vanilla extract.
Second, give everything a good stir making sure all the ingredients are evenly distributed throughout. You can also just shake the bottle.
Third, place the mixture in the fridge and allow to set for at least 2 hours but overnight is ideal. The longer the chia seed pudding is in the fridge, the more pudding-like consistency it gets to. That is why this recipe is so great to meal prep!

This pumpkin chia seed pudding is creamy and festive and is oh so easy to bring together! Not to mention it is a great recipe to meal prep at the beginning of the week.
Ingredients
- 2 tablespoons chia seeds
- 1/2 cup milk, dairy or non-dairy
- 1/4 cup 100% pumpkin puree
- 1/2 teaspoon pure vanilla extract
- 2 teaspoons pure maple syrup
- 1/8 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
Instructions
- To start, in a medium sized jar or bowl, add all the ingredients. I love using a mason jar or something with a lid, so it is easy to take on the go.
- Second. give everything a good stir until all the ingredients are evenly distributed throughout. The mixture will be runny, but that will change as it sets.
- Now, set the mixture into the fridge for at least two hours. The longer the better. Overnight is ideal. The more it has set in the fridge the more pudding like the mixture will become. The chia seeds soak up the liquid as it sets.
- Once at least two hours is up, finish off the chia seed pudding with desired toppings.
- Enjoy!
