Greek yogurt chicken salad sandwiches are one of my favorite meals to enjoy for lunch. It’s not only delicious, but also quick to put together and packed with protein. Plus, nothing beats a chicken salad sandwich on a homemade sourdough bagel!
Recently, I made a batch of sourdough discard bagels. Personally, I love this recipe because it’s a quick and efficient way to use up my sourdough starter discard! These bagels have such a delicious tangy flavor that pairs so well with the chewy texture. I don’t make them often, but when I do I savor and enjoy every bite.
I’ve also been on a mission to find healthy, protein packed lunch recipes as I’m currently in my 7th month of pregnancy! So, I can confidently say I’ve found the perfect combo with these greek yogurt chicken salad sandwiches on homemade sourdough bagels.

How to make greek yogurt chicken salad sandwiches
First things first, you’ll need to get a batch of sourdough discard bagels going. Additionally, you’ll need to have pre cooked chicken readily available. Personally, I baked my own whole chicken. This is also great to have on hand because you can save the carcass to make your own chicken broth.
Next, gather the ingredients needed to make the chicken salad. This includes shredded chicken, plain greek yogurt, dijon mustard, salt and pepper, garlic powder, chopped walnuts, an apple, celery and parsley. For the sandwich, grab lettuce and a bagel.
After that you’ll want to start prepping ingredients. Dice the apple, onion and celery. Chop the walnuts and parsley. Now, it’s time to begin!
First, add the shredded chicken, greek yogurt and dijon mustard to a large mixing bowl. Using a large spoon, mix to combine.
Second, add in apples, walnuts, celery and onion. Again, stir to combine.
Lastly, finish off the chicken salad by seasoning with salt, pepper and garlic powder. Top it off with fresh parsley.
The fun part comes next! Slice the sourdough bagel in half using a bread knife. Place lettuce on the bottom slice and then pile on the chicken salad. Put the top of the bagel back on and you’ve got yourself a delicious chicken salad sandwich!

These creamy greek yogurt chicken salad sandwiches are full of protein, healthy fats, vitamins and minerals to give you a well rounded option for lunch. The best part? It's enjoyed on a delicous sourdough bagel!
Ingredients
- 2.5 cups pre-cooked chicken shredded
- 1/2 cup plain greek yogurt
- 1 TBS fresh parsley chopped
- 1/2 cup celery diced
- 1 cup apples diced
- 1/4 cup chopped walnuts
- 1/2 purple onion diced
- 1/4 tsp garlic powder
- 1/4 tsp pepper
- 1/4 tsp salt
- 2 TBS dijon mustard
Instructions
- Begin by dicing the onion, apple and celery. Chop walnuts if necessary and also chop the parsley. Set aside.
- To a large bowl, add the shredded chicken, greek yogurt and dijon mustard. Stir to combine.
- Next, add in the chopped onion, apple, celery and walnuts. Stir until everything is well coated and combined.
- Finish off the chicken salad by seasoning with salt and pepper, garlic powder, and chopped parsley.
- Slice your sourdough bagel in half. To the bottom slice add a couple of pieces of lettuce. Then, pile chicken salad on top and cover with the top half of the bagle. Enjoy!
