This pomegranate Christmas salad is light and refreshing. It is a great starter to a delicious Holiday meal or even one to meal prep for throughout the week!
I don’t know about you but in the Winter, even more so than the Summer, I crave greens. I want all the fresh vegetables. Maybe it is because there aren’t local fresh vegetables anymore so I want what I can’t have. Either way, this salad satisfies that desire to have those fresh greens.
I still stand by the fact that a good meal starts with a delicious salad. Growing up, my mom would often make a nice salad to go with our dinners. They were packed full of flavor and more often times than not topped with the best croutons. She always said, and still does, that we need that ruffage in our stomachs as a base.
When it comes to holidays, my grandmother makes a salad for almost every holiday. I especially love the salad she makes at Christmas. Her Christmas salad inspired this one here. She makes one with mixed greens, pomegranates, clementines, and the creamiest dressing. It can’t get better than hers but this one was still delicious.
Now, a good salad has a bunch of different flavors and textures, and this Christmas pomegranate salad is not lacking in that truth one bit. Thinly chopped lettuce for the perfect bite sized pieces, crunchy and slightly salty pistachios that are roughly chopped, creamy goat cheese, sweet and juicy clementines, and a fun pop and texture from the pomegranate seeds.
If you have a favorite Christmas salad that you make each year around this time, we would love to hear about it in the comments down below!
Why You Will Love This Pomegranate Christmas Salad
- Like said above, this salad lacks nothing in the flavor and texture department. It is full of crunchiness, sweetness, saltiness, and more!
- This salad is also a great one to meal prep! Weather it is pre chopping all of the ingredients and then assembling them all together later or just assembling it all together at once and placing it in the fridge. Although, I would recommend putting the nuts on right before eating so they don’t change in texture.
- This salad is beautiful and vibrant. It will look great on a beautiful Christmas tablescape or really on any table. It will be the star of the show with bright orange clementines and deep red pomegranates.
Easy Ways to Deseed a Pomegranate
One easy way to deseed a pomegranate is to cut all the way around its equator and then carefully separating the two sections and pulling them apart. Then turning the open pomegranate facing a bowl, hit the other side of the pomegranate with a wooden spoon so the seeds fall into the bowl. Rotating until all the seeds are out. Another easy way to deseed a pomegranate is to fill a bowl with water of any temperature. Then, cut the top of the pomegranate off, and pull apart the pomegranate over the bowl of water. The pomegranate seeds will sink down to the bottom of the bowl and the white skin will float. Once all the seeds are out, you can just scrape the white skin off of the top of the water and you are left with seeds! FAQs
What are the benefits of pomegranate in salad?
Pomegranates have many benefits. Some of those benefits being that they are an excellent source of fiber, they are rich in vitamin C and K, and they are a good source of folate, potassium, and copper. Pomegranates also have antioxidants in them that are called polyphenols that help combat unstable molecules in DNA and cells over time.
How do you serve pomegranates to guests?
Pomegranates are not only a great thing to add into a salad. Pomegranates are also great paired with some chicken or even thrown in a festive cocktail.
What flavors go well with pomegranate?
Pomegranates are a versatile ingredient. They are great with arugula, grapefruit, watermelon, apples, and even pears! Honestly, the options are endless.
Ingredients
Lettuce of choice – When it comes to lettuce, the options are endless. Weather it is finely chopped romaine, a spring mix, arugula, or red leaf, any will work! If using anything that is not precut, be sure to chop the lettuce into bite sized pieces.
Pomegranates
Pistachios
Goat Cheese – the options of goat cheese are endless as well. I used a vanilla and blueberry flavored goat cheese log. Goat cheese logs or the crumbles you buy at the store are creamy. They are a great texture for salads. Although, a block of goat cheese that is thinly shaved (almost like chocolate curls) would be great as well! The softer goat cheeses tend to be stronger tasting.
Yup that’s all!
How to Make a Pomegranate Christmas Salad Step-by-Step
To start, you are going to prep the ingredients needed for the salad. To do this, wash, dry, and cut your lettuce of choice that you are using. As well as deseeding the pomegranate if you are using a fresh one. For the clementines, peel them and slice them. When it comes to the pistachios, give them a rough chop to make them easier to eat.
To assemble, start with the prepped lettuce, nicely arrange the sliced clementines on top of the cut lettuce, scatter the pomegranate seeds and the chopped pistachios on the bed of lettuce and clementines. Lastly, crumble on the creamy goat cheese on top of it all.
Just before serving, pour over your desired dressing.
Enjoy!

Notes
1. When it comes to the goat cheese, there really are endless options. Whether it is using goat cheese that is pre crumbled, goat cheese from a log, or from a chunk and having it be harder. Both are giving off wonderful flavor. I like the creamier goat cheese that comes pre crumbled or in a log because it gives off deeper and richer flavor. But again, either is great.
2. If you are making this salad ahead of time, add the pistachios in jsut before serving to ensure that they keep their crunchy texture.
