Rice Noodles – the base for our shrimp spring roll bowl. Rice noodles can be found in the international section of your local grocery store.
Shrimp – Fresh shrimp or shrimp that has been frozen will work. Just follow the steps needed to cook it if using frozen.
Cucumber – cucumber provides a freshness and crunch to the bowl.
Carrots – light, refreshing, and crunchy.
Avocado – A creamy touch.
Red Bell pepper – Similar to the carrot and cucumber, a refreshing and texture satisfying veggie!

How to Make Shrimp Spring Roll in A Bowl Step by Step
To start prep the ingredients needed for the bowl. Cook your shrimp according to the packaging, as well as the rice noodles. Be sure to run your nice noodles under cold water once cooked. Set aside.

Prep the veggies needed as well! Thinly slice the cucumbers, carrots, avocado, and red bell pepper. Set aside.
To make the peanut sauce, combine the peanut butter, soy sauce, water, and hot sauce together and mix well. Set aside.
To assemble the bowl, add your noodles as the base to start.
Once the noodles are in, arrange on the prepared veggies as desired.

This spring roll in a bowl gives you all the flavors and textures you love in a spring roll but without the work of needing to roll. This spring roll in a bowl is light and refreshing, perfect for the warmer Spring weather we've been having! Let's make this yummy meal together!
Ingredients
- 20 count shrimp (about 1 lb.)
- 4 ounces vermicelli rice noodles
- 1/2 red bell pepper, thinly sliced
- 1 avocado, thinly sliced
- 1/2 cup cucumber, thinly sliced
- 1/3 carrots, thinly sliced
- Fresh basil, for garnish
- Fresh parsley, for garnish
- Lime wedge, for garnish
For the Peanut Sauce
- 1/4 cup creamy peanut butter
- 2 Tablespoons soy sauce
- 2 Tablespoons hot sauce of choice
- Splash of water
Instructions
- To start, cook the vermicelli rice noodles according to the packaging. As well as cooking the shrimp. Set aside.
- Now, prep the veggies needed for the spring roll bowl. This looks like thinly slicing the carrots, cucumber, red pepper, and avocado. Set aside.
- For the peanut sauce, mix all of the ingredients together until a creamy sauce is formed. Set aside.
- To assemble the spring roll bowl, lay down the cooked rice noodles. To the top of the bed of noodles, arrange the thinly sliced vegetables as well as the shrimp.
- Top the bowl with a drizzle of the homemade peanut sauce as well as the fresh herbs.
