I think it is safe to say we are in tomato season. My garden is full of them. I have more than I know what to do with. How to Make Caprese Stuffed Chicken Breast Step-by-Step
To start, take your boneless, skinless chicken breast and cut a slit long ways down the side. Taking the cut into the chicken but not the whole way that you cut the chicken breast in half. This will create a pocket to stuff our caprese ingredients into.
Second, season the chicken on both sides thoroughly with salt and pepper and dried oregano.
Into the pocket that was cut earlier, add the sliced tomato, sliced mozzarella, a leaf of basil, and secure together with toothpicks. As many as needed.
Put olive or avocado oil in the bottom of a cast iron or oven safe frying pan, sear the chicken on both sides until golden brown. If you don’t have an oven safe frying pan, then transfer over to a baking dish. Then, transfer over to the oven to finish cooking.
Once finished baking, finish with a drizzle of balsamic glace and some chopped basil.

This caprese baked chicken is a summer staple meal. Full of fresh tomatoes, sliced mozzarella, fresh basil, and drizzle with a bit of balsamic glace. This recipe will get you in and out of the kitchen quickly while ensuring a delicious meal!
Ingredients
- 4 chicken breasts, boneless and skinless
- 1 large tomato, sliced thinly
- 1 mozzarella log, sliced into about 1/2-inch pieces
- Fresh basil
- Salt and pepper, to taste
- 3 tablespoons dried oregano
- Balsamic glaze for drizzling
- 2 tablespoons olive oil
Instructions
- Start by preheating the oven to 400 degrees Fahrenheit.
- Now, taking the four chicken breasts, slice them down the side while also going in the chicken, but not fully that you cut the chicken completely in half. We are creating a "pocket" to put the caprese ingredients into. 4 chicken breasts, boneless and skinless
- Thirdly, season each side of the chicken breasts with salt, pepper, and dried oregano. Salt, pepper, 3 tablespoons dried oregano.
- Once the chicken is seasoned, it is time to stuff! Layer 2 slices of mozzarella down, then two slices of tomatoes, then 2 fresh basil leaves, then finishing off with 2 more mozzarella slices. Keep the chicken closed by sealing it with toothpicks. Repeat that with all 4 chicken breasts. 1 large tomato, 1 mozzarella log, fresh basil.
- Next, take your oven safe frying pan and heat it up on medium heat. Once warm, add in oil and sear both sides of the chicken breasts until golden. About 3 minutes each side. Transfer directly into the oven and bake until chicken is fully cooked through. At least 165 degrees Fahrenheit. This will take roughly 20 - 25 minutes. Although, it is good to check periodically. 2 tablespoons olive oil
- Just before serving, drizzle with balsamic glaze. Enjoy!
