This homemade cherry galette is perfectly imperfect. A quick dough roughly folded over some fresh cherries that have been tossed in sugar, lemon juice, vanilla extract, and a bit of flour. A refreshing summer dessert!
We haven’t done any cherry desserts here on the blog and I knew I had to change that. However, if you are in need of a savory cherry dish, try this baked cherry chicken. You will LOVE it! I also knew exactly what dessert I needed to do to kick off these cherry desserts: a cherry galette.
Now, to be completely honest, I have only made a galette once. My husband and I had his parents over and I wasn’t sure what to make for dessert. Although, I knew I had a bag of frozen fruit in the freezer, and I also had seen other people’s recipes for galette’s before. So, I thought I would give it a try. It seemed simple and quick enough to whip up. Well, long story long, everyone loved it! In fact, they couldn’t get enough of it. Retelling this story makes me realize I don’t make galettes enough.

Ingredients
For the Crust:
Oil – of any kind. Today I used avocado oil. Although I have also used olive and canola.
Milk – of any kind. I use whole milk.
All Purpose Flour
Salt
For the Cherry Filling:
Cherries – Fresh or frozen, pitted.
Lemon Juice
All Purpose Flour
Vanilla Extract
Granulated Sugar
Extra
Egg
How to Make Cherry Galette Step-by-Step
Start by pitting the cherries if using fresh. Then, to the cherries add the lemon juice, vanilla extract, flour, and granulated sugar. Stir to distribute and let sit while you make the crust.
To make the crust, add all the ingredients together and mix until just combined. Try not to touch it too much or it will get too dry. Then, roll it out in a rough circle.
Add the cherries that have been sitting into the center of the crust. Leaving an inch to two inches around the edges.
Fold the crust around the edges up onto the edge of cherry filling. Brush the egg on the crust just before popping it in the oven.
Let cool slightly and enjoy!
The Best Cherry Galette Recipe
This cherry galette has a soft and flaky oil-based crust and fresh cherries. It is a quick and simple recipe that is oh so delicious.
Ingredients
- 1 Oil Based Crust
- 1 Egg
- 3 cups cherries
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
- 1 tablespoon all purpose flour
- 1/3 cup granulated sugar
Instructions
- Before doing anything, preheat your oven to 400 degrees F.
- To start, if using fresh cherries, pit them. Now, to the cherries, add in the lemon juice, vanilla extract, all-purpose flour, and granulated sugar. Set that aside while you make the crust. 3 cups cherries, 1 tablespoon lemon juice, 1/2 teaspoon vanilla extract, 1 tablespoon all-purpose flour, 1/3 cup granulated sugar.
- To make the crust, click on the "oil-based crust" ingredient to go about making the soft and flaky crust. 1 oil-based crust
- Now, roll out the oil-based crust into a rough circle. Large enough to have some excess crust around the edges.
- Once crust is rolled out, add the cherry mixture into the middle of it, leaving about 1 to 2 inches all around the edges.
- Using the leftover crust that is all around the edges, fold it over top of the cherries.
- Lastly, beat the one egg and add brush it onto the crust.
- Bake in the preheated oven for about 25 minutes or until the galette has a nice golden-brown color to it.
- Cool slightly before serving with desired toppings! Enjoy!
