Now, add these grilled peaches and creme sourdough crepes to the list of peach recipe must makes! I got the inspiration for these crepes from the strawberries and cream overnight oats and the strawberries and cream sourdough cookies. I loved the combination of cream taste with fresh fruit. So, it just made sense to attempt that with peaches.
Grilling the peaches really helped bring out the flavor so incorporating that into the recipe was a must. As well as, drizzling with honey. I feel like that explains itself though. Why not add honey?

Making Grilled Peaches and Cream Crepes Step-by-Step
To start, melt the butter by sticking it in the microwave or in a pan over the stovetop.
While the butter is melting, make the batter. Combine the sourdough starter, milk, eggs, flour, and vanilla extract. Once butter is melted, add in 2/3 of it to the batter. Reserving the 1/3 of it to grill the peaches. Whisking as you add to make sure nothing within the batter gets too hot. Set batter aside.
Heat up the grill or cast-iron grill. While heating, cut the peaches in half, removing the seeds, and dipping the flesh part of the peaches into the remaining melted butter. Put on the heated grill and grill until grill lines are just noticeable. About 5-7 minutes depending on how hot the grill is. Set grilled peaches aside.
Make the crepes by heating up a pan until extremely hot. Adding a bit of oil once hot and pouring about 1/4 cup of batter into hot pan and spreading the batter around with a spatula until evenly distributed and thin.
Once all crepes are made, removed pan from hot burner and add a small pot with the honey in it to get it melted and able to drizzle.
Once all crepes are cooked, make the whipped cream by combining heavy whipping cream, powdered sugar, and vanilla extract.
To assemble, spread whipped cream all around the crepe, sliced peaches in the middle, and drizzle honey on top. Fold each side over towards the middle or roll from one side to the other.
