Breakfast is by far my favorite meal of the day. I keep it pretty simple, but it really is the perfect kickstart for my day! When my stomach is full from a yummy, nutritious breakfast I feel ready to tackle my homemaking.
Usually, my breakfast meal consists of scrambled eggs with fresh toasted sourdough bread smothered in avocado. Top it off with Everything Bagel Seasoning and a juicy sliced tomato! Mmm, it’s delicious! Seriously, I could live off of eggs.
While I’ll probably stick to my tried and true breakfast most of the time, occasionally it’s fun to switch it up a bit. Making something special or different for my husband can be especially fun on Saturday’s when we get to enjoy long mornings together.

Lemon Blueberry Baked Oatmeal
Lemon blueberry baked oatmeal is great to make at the beginning of the week and enjoy throughout! Since oats are usually a staple for most homemakers, this recipe shouldn’t be hard to whip up without much thought or preparation. You could even omit the blueberries and add in whatever fresh fruit you have on hand. It’s super versatile! I enjoy eating my baked oatmeal with fresh milk.
Overnight Baked French Toast With Strawberry Sauce
If you’re looking for a fancy recipe that’s mostly hands free, this is the one to try. Most of the work is done in the fridge overnight and in the oven! Serving this dish with a generous dose of juicy strawberry sauce is what makes it extra tasty. However, you could skip the sauce if time doesn’t allow for it. You’ll still be left with a delicious french toast casserole! I also love serving this with homemade whipped cream.
Chia Seed Pudding
Chia seed pudding has truly got to be one of the most easy breakfast recipes ever. Plus, it has such a unique texture and tastes so so good. Like I said, scrambled eggs are my go to breakfast which makes quiche a close second.

We started off with oats and we’ll end with it as well. Oatmeal is a classic breakfast recipe that can be made in so many different ways. Apple cinnamon oatmeal is one of my personal favorites to enjoy all throughout the year but more specifically in the colder months. There’s something so comforting about a warm, creamy bowl of oats topped with crisp apples. Multiple flavors come together and make the most wonderful explosion in your mouth. Trust me, this is one recipe you’ll cling to!
