I love whenever I find quick, easy and of course, delicious snack recipes to try! Chia seed pudding is one of those recipes that I've had in my back pocket for a long time now.
One of the best things about chia seed pudding is how easily it can be altered or changed according to the season. For instance, my family and I really enjoy this pumpkin chia seed pudding recipe once fall rolls around!

- Coconut milk helps with weight management. Medium chain fatty acids, MCTs for short, promote feelings of fullness which aid in weight management. Body fat may also be reduced because of coconut milk.
- It's dairy free. There's no milk in this chia seed pudding, so it's a great dairy free alternative for those who can't handle lactose.
- Great for skin and hair. A huge plus when it comes to using coconut milk is the fact that it's hydrating for skin while also promoting a clear complexion. Your scalp will also be nourished!
Delicious Topping Ideas

Whipped cream - Kids will love this one! To spice it up even more, try making your own whipped cream with a bit of whipping cream, maple syrup, and vanilla.
Chocolate chips - Add a sweet crunch with chocolate chips! A personal favorite is dark chocolate chips, but you could also use milk chocolate or white chocolate.

Chia Seed Pudding With Coconut Milk
Make this chia seed pudding with coconut milk for a delicious, creamy breakfast, afternoon snack, or bedtime sweet treat!
Ingredients
- 2 cups coconut milk (or milk of choice)
- 8 tablespoon chia seeds
- 2 teaspoons vanilla extract
- 8 teaspoons honey (or maple syrup)
Instructions
- Add the coconut milk to a large mixing bowl. 2 cups coconut milk
- On top of the coconut milk add the chia seeds, honey and vanilla. 8 tbs chia seeds, 2 teaspoon vanilla, 8 teaspoon honey
- Mix all of the ingredients together until well combined.
- Pour the chia seed pudding mixture into individual mason jars or one large jar. You could also use a bowl.
- Let sit in the fridge for at least 2 hours until set and no longer runny.
- Top with fresh berries, another drizzle of honey, and enjoy!
Notes
- Whole milk will work just as well for this recipe. You may, however, need to add an extra hour or two for the chia seed pudding to set.
- Maple syrup will also work as a sweetener if you prefer not to use honey. Add more or less according to your desired taste.
- Since there's no dairy in this chia pudding, it should last in the fridge for up to 2 weeks.
