- 2 eggs, hard boiled
- 2 Tablespoons celery, finely chopped
- 2 Tablespoons onion, finely chopped
- 1 Tablespoon parsley, chopped
- 1 Tablespoon mayonnaise
- 1 Teaspoon mustard
- 1/4 teaspoon lemon juice
- 2 slices of bread
Instructions
- To start, hard boil your eggs if not done already. I find that a 10-minute boil is the perfect amount of time! 2 eggs, hard boiled
- Once your eggs are hard boiled, chop them up into a small bowl.
- To the chopped eggs, add in the chopped celery, onion and parsley. As well as adding in the mayonnaise, mustard, and lemon juice. 2 Tablespoons celery, 2 Tablespoons onion, 1 Tablespoon parsley, 1 Tablespoon mayonnaise, 1 teaspoon mustard, 1/4 teaspoon lemon juice
- Give everything a good stir until you have a creamy egg salad.
- Place the egg salad between two slices of bread (toasted if desired). 2 slices of bread of choice
