Last week we truly got a taste of fall here in Lancaster, Pennsylvania. The mornings were crisp and in the 50’s and the afternoons had a cool breeze coming through. I loved it so much. It was cozy and got me excited for the Fall weather to come.

- 2 cups rolled oats
- 3/4 cup milk of choice
- 1 egg
- 1/2 cup honey or maple syrup
- 1/3 cup olive oil
- 1 cup pumpkin puree
- 1 1/2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 3/4 cup mix-ins (chocolate chips, pecans, pumpkin seeds etc.)
Instructions
- To start, preheat your oven to 350 degrees Fahrenheit.
- Now, in a large mixing bowl, add all the ingredients needed for the pumpkin pie baked oatmeal. Give everything a good stir with a wooden spoon. The batter will be creamy and orange from the pumpkin puree.
